ORIGIN: At the young age of 23, Carolina Samboni is following in her parent’s footsteps as a coffee producer. She has been running the 1.5-hectare farm for two years and sees coffee as an avenue to bridge the traditions of her multigenerational farm with her own sense of innovation. As demonstrated with this special Pink Bourbon varietal lot. Up to this harvest, her production has been sold to large multinational buyers in the region, making this her first direct export!
FLAVOUR: When I first cupped Carolina’s coffee, I was expecting those hallmark Huila notes with cirtus fruits over cherry but instead found a great berry flavour that really reminds me of sticky strawberry and rhubarb jam. The finish is loaded with sweet baked goods, think fig newtons, apple pie, date square, and crumbled brown sugar.
